Observed employee wash hands at hand wash sink in back kitchen, employee stated water did not get hot. Water ran for approximately 4 minutes to achieve water temperature of 85F.

Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Tested with irreversible thermometer at 140F, machine gauge reads 140F. Warning
