  • 08B-38-4:Basic - Food stored on floor. Observed container of cornmeal stored on floor at dry storage closet with broken non intact lid and employee shoes stored on top. Manager discarded. Corrected On-Site
  • 16-04-4:Basic - No drainboards or equivalent provided for soiled items and/or air drying cleaned items. Observed no space for air drying the amount of dishes that the establishment uses. Manager states that they dry dishes with a towel.. all dishes must be placed in a way after washing that air circulation dries the dishes before stacking or placing for use.

Manager stated not on counter more than 1 hour and replaced in cooler to quickly recook to 41F within 4 hours. **Corrective Action Taken**
