- 10-01-5:Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed scoop stored in oatmeal bulk container located in the dry storage room. Corrected On-Site
- 16-48-4:Basic - Old food stuck to clean dishware/utensils. Observed old food debris left on plastic containers stacked on storage shelves. Manager removed at time of inspection. Corrected On-Site
- 22-57-6:High Priority - Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Checked dish machine three times not properly sanitizing final rinse gauge reading 158-159°f wash gauge less than 160°f. Recommend Manager to set up three compartment sink wash,rinse and sanitize until dish machine is repaired. Warning
