  • 25-06-4:Basic - Single-service articles not stored inverted or protected from contamination. Observed : plates on the buffet line, contact side up. These were inverted. Corrected On-Site
  • 01B-02-5:High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed : milk in the reach-in cooler on the buffet line 48°. These were in there before service, over 4 hours ago.
  • 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : milk and yogurt that were in the buffet line reach-in cooler, over 44° for over 4 hours. The unit was backed against the wall in a corner, and the temperature seating was set on 48°. The unit was pulled away from the wall and the digital thermostat was turned to 37°. A glass of water was placed in the reach-in cooler to test. **Corrective Action Taken**
