Observed service window and back door left open while flying insects present inside food truck. Person in charge closed screen to service window and closed back door during inspection. **Corrected On-Site**
- 06-01-5:Basic - Time/temperature control for safety food thawed in an improper manner. Observed chicken thawing on counter and beef n onions thawing on counter. Discussed options with person in charge.
- 35A-02-6:High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed two live flying insects inside food truck. - 22-38-5:Intermediate - No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. Observed no sanitizer for use at triple sink. Person in charge had employee purchase bleach from store. **Corrected On-Site**
- 02C-04-5:Intermediate - Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed previously prepared and frozen beef and onions, chicken not date marked when made. Discussed with operator about freezing and date marking.
