Observed rice (50F - Cooling)cooling from day before. Stored on bottom touching floor of cooler which is not cooled to optimal temperature. Must place shelf on bottom so air flow can circulate fully around the foods. Rice must cook from Q135F tom41F within 6 hours. New coolers not set at cool enough temperature to optimize cooling. Operator will turn thermostat down to 34F and place shelved over bottom, not put food containers in direct contact with floor of cooler. Ambient air of cooler at 39F. Floor of cooler at 47 to 50 F.
