Observed the following food temperatures greater than 41°F; lamb and rice (69F - Cold Holding); fried Smelt (71F - Cold Holding); chicken wings (70F - Cold Holding); roasted pork (62F - Cold Holding) All were located on top of front counter intended for customers. Advised that all foods must be kept in cooler at 41°F or below. As per manager food had only been out for about an hour.

Observed all employees trained through Florida Restaurant and Lodging Association but original certificates. Operator provided copies.
