  • 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed tcs cheese (57F - Cold Holding); tomatoes sliced (52F - Cold Holding); sauce (51F - Cold Holding); hummus (48F - Cold Holding). As per operator, all above mentioned food items transferred to unit 3.5 hours prior to the inspection. Manager moved the temperature abused items to freezer to quick chill. After 30 min cooling all TCS food temped at 41-43F Corrected On-Site Warning
