- 22-16-4:Basic - Reach-in cooler interior has accumulation of soil residues. Lower section of make table on cook line
- 08B-27-4:High Priority - Food placed in soiled container/equipment. Hot dogs in zip lock bag in hand wash sink. Hot dogs were moved to cooler.
- 14-86-1:High Priority - Non-food grade paper/paper towel used as liner for food container. Paper towels in bag with lettuce. We discussed the reason that paper towels are not allowed to be used as a food contact surface and discussed things that can be used such as coffee filters or deli paper
- 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Sliced cheese 46F cold hold, lettuce 46F cold hold. Items were placed in walk in cooler to cool and will remain until it is determined if the unit is cooling properly. All food was placed in unit at 12:00pm, less than 4 hours. **Corrective Action Taken**
