Observed cook touch counter while in the prep kitchen did not wash handing before starting to cook on line.

- 23-03-4:Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed hood filters very greasy underneath fire suppression system.
- 22-16-4:Basic - Reach-in cooler interior/shelves have accumulation of soil residues. Observed old food debris spilled on the bottom of reach in cooler and freezer. **Corrected On-Site**

Checked temperature 46°f general tso chicken stored inside reach in cooler per Manager cooked before open restaurant less than 4 hours recommend to quick chill product in the reach in freezer.
- 02C-04-5:Intermediate - Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed wontons stored inside reach in freezer, spoke to Manager concerning date marked.
