In front counter HOT CASE - assorted empanadas (128-131F - Hot Holding). Per manager all in unit 45 minutes to 1 hour. Employee moved to oven to reheat above 165F. Second temperatures taken 174-179F. Advised operator that all in house prepared products must be marked with production date and date that product went into freezer.
