  • 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At arrival operator stated that the walk-in cooler was not operating and that the repairman was onsite working on cooler. The foods were being held in a refrigerated truck box outside until the cooler could maintain temp. Inspector observed ham 2qts (51F - Cold Holding); chicken 2cups (52F - Cold Holding) inside the walk-in , operator stated the foods were placed there at 1100am. Foods must be used or discarded by300pm.
  • 03F-02-5:High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Observed 2 racks of premade pizzas standing in rack at room temperature with no time marking. Operator states the pizzas were made 15 and 20 minutes ago and added time markings. Corrected On-Site
