The operator discards the foods at the end of breakfast service. The operator was emailed a time as public health control form. **Corrective Action Taken**
02C-03-5:Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed sausage gravy removed from the container and held for more than 24 hours with no date mark.
