  • 03B-01-6:High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked chicharron pork belly meat, in hot holding unit at front counter tempting at 120° operator had left door on holding unit open for approximately 20 minutes. Operator turned up, heat on unit and closed door. **Corrective Action Taken**
