Observed cooler of warmed tortillas, And containers of portioned salsas and portioned cut cabbage packs stored right outside of door entrance to food trailer. Observed four buckets of lard on back prep table behind trailer. Manager moved all items onto trailer. Corrected On-Site - From follow-up inspection 2026-01-07: observed employee cutting pork on cutting board outside of food trailer on prep table and storing in steam well. Employee was serving pork to customers. Observed cut onions, limes and cilantro and pan of guacamole store on outside ledge, where employee was scooping and brining onto trailer for individual orders. Observed coolers of warmed tortillas being stored outside food trailer. Observed coolers with portioned cabbage packs, and portion salsas outside of food trailer. Stop sale issued on pork, cut, onions, cut limes, and cut cilantro, being prepared and served without proper protection. Admin Complaint
