Observed mashed potatoes 45F, gravy 45F, black eyed peas 47F, collard greens 54F stored in reach in cooler display case at front counter. Ambient temperature: 50F at 12:45. Per manager held since yesterday and door has been opened frequently since 11:00. Manager stored food in different cooler and kept display case cooler closed. Ambient temperature at 1:15: 41F. New food temperatures at 1:30: mashed potatoes 44F, gravy 41F, black eyed peas 41F, collard greens 47F. Manager turned down ambient temperature to ensure food items will be held at proper temperature despite doors opening. Per manager will log food item temperatures in front counter reach in cooler display case when open and operating. **Corrective Action Taken**
