Observed 3 packages of reduced oxygen packaged tuna with labels indicating to remove before thawing in the large door reach in cooler not removed from their reduced oxygen environment before being completely thawed.
- 24-08-4:Basic - Equipment and utensils not properly air-dried - wet nesting. Observed plastic food containers stack on drying rack with visible moisture.
- 10-07-4:Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed multiple containers of water ranging from 72-80F filled with utensils on cook line. Discussed with person in charge. Person in charge dumped all water. **Corrected On-Site**
