- 22-08-4:Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed old food splatter on crevices of interior of microwave.
- 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed self service refrigerator at buffet butter (45F - Cold Holding); cream cheese (44F - Cold Holding) ambient air at 44F refrigerator thermostat reading 42. Operator removed the TCS foods to refrigerator in back to quickly cool foods to 41F or colder within 1hour. Foods on line for 3 hours. If recooked to 41 within 1 hour ambient cooling parameters will be met. Operator will not use buffet refrigerator until able to maintain foods at 41F or below. **Corrective Action Taken**

Observed whole apples wrapped for self service onsite, employee states apples are removed from produce box and wrapped without washing first. Offering raw unwashed wrapped onsite apples to customers at self service buffet. All previously wrapped apples must be unwrapped washed, air dried and rewrapped before offering to customers.
