Observed on the buffet line: Shredded cheese (62F - Cold Holding); Cut fruit (53F - Cold Holding). Operator stated they had been out for approximately 2 hours. Operator stated they disposed of their product at the end of their 3 and 1/2hr breakfast. Emailed them a time as a public health control form.
