- 23-03-4:Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed grease build up on the roof of the fry warmer.
- 03B-01-6:High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed on the cook line: Cooked onions (100F - Hot Holding); Cooked mushrooms (100F - Cold Holding). Operator stated they had been out for approximately 1hr.
