- 16-55-4:Basic - Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Operator states dishwasher is not filling with water and not dispensing chemicals correctly. Operator Has repairs scheduled and will be using 3 bay sink until repairs are made.
- 35B-05-4:Basic - Outer openings not protected during operation and vermin and/or environmental cross contamination present. Operator had back door open at time of inspection to take out trash. There is no air curtain over doorway
- 03B-01-6:High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Queso and black beans 90F-124F in front line steamwell less than 4hrs. . Operator immediately reheated queso to 165F **Corrected On-Site**
