  • 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Butter on counter at flip top reach in cooler in kitchen at 74F. Per manager, butter placed out of refrigeration at 9:00. Temperature taken at approximately 10:30. Manager states per company standards, butter is held for up to 24 hours out of refrigeration. Inspector provided DBPR Form HR 5022-090 via email and discussed proper time control procedures with manager. Manager began holding butter on four hour time controls and labeled properly. **Corrective Action Taken**
