  • 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the flip top reach in cooler, cut lettuce (47F - Cold Holding); cheese (48F - Cold Holding); hot dog (47F - Cold Holding); Turkey (49F - Cold Holding); steak (50F - Cold Holding). Ambient air of reach in cooler at 43F. Per operator door could have been left open accidentally. Operator relocated all time/temperature control food for safety to the reach in freezer to bring back to temperature range and will monitor temperature of cooler to see if repair is needed. At conclusion of inspection operator had relocated products from freezer to standup reach in cooler, cut lettuce second temperature(46F - Cold Holding); cheese second temperature (47F - Cold Holding); hot dog second temperature(46F - Cold Holding); Turkey second temperature(50F - Cold Holding); steak second temperature (48F - Cold Holding).
