Employee at cookline stated the sausage patties were placed inside the cooler from the walk-in cooler approximately 7am and moved them to the freezer to rapidly cool to 41F. 2. Inside walk-in cooler: ribs (48F - Cold Holding). Employee at cookline stated the ribs were held at room temperature at cookline for approximately 15 minutes one hour prior, then moved them to a freezer to rapidly cool to 41F. **Corrective Action Taken**
