Observed ahi tuna steaks still in ROP packaging defrosting in container in ambient temperature, STILL FROZEN. Coached operator on proper ROP defrosting methods. Operator took ahi out of ROP packaging and placed inside walk in cooler. Corrected On-Site
  • 14-09-4:Basic - Cutting board has cut marks and is no longer cleanable. Observed excessive cut marks on cutting boards on prep table.
  • 14-69-4:Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice buildup up in reach in freezer.
  • 22-08-4:Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed soiled interior of oven by cook line. Observed soiled interior of microwave.
