  • 14-05-4:Basic - Cardboard used to line food-contact shelves. Observed cardboard used liner under food containers in the reach in coolers located at front counter.
  • 16-29-4:Basic - Clean in place equipment not washed, rinsed and sanitized using three distinct steps. Observed employee cleaning and sanitizing cutting boards observed top of the preparation table at preparation area with the WC Sanitizing solution. Instructed manager the cutting boards have to be properly cleaned between uses in the three compartment sink. **Corrective Action Taken**
