  • 03D-15-4:Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Cold table; sliced tomatoes (43-51F @ 1100 to 42-51F @ 1120 - Ambient Cooling since 1000). Observed overstocked tomatoes, tomatoes on top not on any temperature control to cool down properly. Operator took top layer of tomatoes to quick chill in reach in freezer. **Corrective Action Taken**
