  • 03D-15-4:Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. clam chowder 122 f in crock pot insert container on table at 2:33 pm cooling 30 minutes second temperature 122 at 2:53 pm . At this rate of cooling it will not reach 135 f to 70 f within 2 hours and 135 f to 41 f or colder within total of 6 hours. seafood salad 48 f as per chef ambient cooling 30 minutes. Second temperature 48 f after 20 minutes in upright cooler. Explained to poke holes in the plastic film or leave it uncovered while cooling. At this rate of cooling it will not reach 41 f within 4 hours from the time food was removed from the controlled temperature. Warning
