Per manager he just turned the cooler on. Cooler temperature was at 49F and dropping to 48F within seconds. Temperature of cooler at end of inspection. Manager put tomato and lettuce in freezer to rapidly cool. Food items 41F or below at end of inspection. Corrected On-Site
  • 03B-01-6:High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. chicken (89F - Hot Holding) stored in foil pan next to flat top grill. Explained to manager chicken can only be held hot above 135F or cold 41F or below also gave him the option to keep chicken wings on a 4 hour hold time using time as a public health control for food safety.
