- 10-07-4:Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Two pairs of tongs stored in container of standing water of less than 135F next to steamtable.
- 12A-07-5:High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee washing knife in triple sink, then put gloves on and made sandwich without washing hands. Also, employee sweeping floor, then put on gloves without washing hands first. Operator discussed hand washing procedures with employees

Observed bag of cut lettuce stored above chill line of reach-in cooler. Employee placed bag of cut lettuce in bottom of reach-in cooler to chill. Also, house made tuna (46F - Cold Holding) in top of flip top reach-in cooler at sandwich making station. Employee stated the lid was opened during lunch. Employee closed lid to chill tuna. **Corrective Action Taken**
