In reach-in cooler bottom section, beef (44F - Cold Holding); cheese (45F - Cold Holding). Ambient temperature 37f. Cooler open for preparing food during lunch rush. Unit is very full limiting air flow.
- 03B-01-6:High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At flat top, shredded beef (110F - Hot Holding). Pan on edge of flat top, half off heat source. At steam table, pork (87F - Hot Holding). Employee stated steam table is not working. Suggested moving to flattop to reheat and hold hot. **Corrective Action Taken**
