Observed blanched potatoes/ French fries (74F-75F - Cold Holding) on cart on cook line. Operator stated he took them out of walk-in-cooler around 10a-10:30a. Discussed using Time as a Public Health Control or placing back in walk-in-cooler to chill. Operator started to cook the fries off. **Corrective Action Taken**
