Observed: the hi temp surface temperature detecting device did not function on the first try.(it had turned off on its own.) other attempts were made. - 22-39-4:High Priority - Chlorine sanitizer in spray bottle/bucket not at proper minimum strength. Observed: 1 sanitizer pan at 0ppm for chlorine.
- 22-49-4:High Priority - Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the hi temp dish wash machine surface temperature was 147°. ALSO, the gauge reading only came to 172°.
- 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: sliced cheese 44°, on the cook line, on the counter. This was placed in a reach-in cooler. **Corrective Action Taken**
