Observed the hi temp dish wash machine only reached 173° on the digital read out. After the initial run, it did not go over 148°. ALSO, the 160° surface test strip did not change color.
- 01B-02-5:High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed: cream cheese packs in the reach-in cooler, 53°. ALSO, the butter packs in the same reach-in cooler, 54°. Both items had been out for breakfast service and returned to the reach-in cooler.
- 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: cream cheese packs in the reach-in cooler, 53°.
