- 10-20-4:Basic - In-use tongs stored on equipment door handle between uses. Observed: tongs on the edge of cooking equipment, protruding in the walkway. These were adjusted in. **Corrected On-Site**
- 10-06-5:Basic - In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Observed: the precooked shredded chicken scoop, handle touching product. The scoop was adjusted. **Corrected On-Site**
- 29-11-4:Basic - Water leaking from pipe and/or faucet/handle. Observed: clear water leaking from under the dipper well cabinet.
- 21-38-4:Basic - Wiping cloth sanitizing solution stored on the floor. Observed: multiple sanitizer buckets with sanitizer stored on the floor of the kitchen. Staff put 2 buckets on shelves away from clean dishes and food. **Corrective Action Taken**
- 22-56-4:Intermediate - Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Observed: 136° temp shown on the display gauge.
- 16-62-1:Intermediate - No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Observed: no surface temperature holding device.

- 12B-07-4:Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed: employee drink on a prep table, this was discarded. **Corrective Action Taken**
- 35A-02-6:High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed: 1 flying insect at the beer cooler door, by the bar.
- 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: slice cheese at the breader station, 54°. Other items in this unit were at a complying temperature. This was placed below with no lid for quicker cooling. **Corrective Action Taken**
- 03B-01-6:High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed: house sauce on the cook line, in a steam well, 117°. This was placed on cooking equipment to bring it to 165 for 1 second. **Corrective Action Taken**
