Observed: boiled egg at 56° in a flip top reach-in cooler, sitting above the food pans. This was placed in an ice bath, and reached 42° in 13 minutes. ALSO, sausage cut in half, in the drawers below the flat top, 44°. This was placed in the walk-in freezer and reached 34° in 12 minutes. Corrected On-Site
