- 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: boiled egg at 56° in a flip top reach-in cooler, sitting above the food pans. This was placed in an ice bath, and reached 42° in 13 minutes. ALSO, sausage cut in half, in the drawers below the flat top, 44°. This was placed in the walk-in freezer and reached 34° in 12 minutes. Corrected On-Site
- 29-42-4:High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Observed lack of back flow device on the non chemical side of the splitter in the mop sink.
