  • 36-34-5:Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed AC return dusted over salad station area.
  • 14-09-4:Basic - Cutting board has cut marks and is no longer cleanable. Observed green auxiliary cutting board at salad station with marks not easy to clean.
  • 24-08-4:Basic - Equipment and utensils not properly air-dried - wet nesting. Observed at drying rack over main 3 compartment sink.
  • 35B-01-4:Basic - Exterior door has a gap at the threshold that opens to the outside. Observed at rear door exit on the back.

Observed meatballs (69F - Cooling); cooked pasta (68F - Cooling) at cooling rack at kitchen area, as per staff for less than 4 hour, staff immediately relocated the rack to walk-in cooler for rapid cooling, staff was requested to take temperature after one hour to ensure product is cooling to safe levels. **Corrective Action Taken**
