  • 08B-38-4:Basic - Food stored on floor. In the kitchen, buckets of soy sauce were stored directly on the floor. In the freezer, cases of food were stored directly on the floor. In the walk-in cooler, a case of eggs was stored directly on the floor. Explained to Operator all food must be stored at least 6 inches off the floor.
  • 23-03-4:Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Many food pans and containers were observed to have labels still adhering to the outside surfaces. Educated Operator about insuring all surfaces are smooth and easily cleanable so as not to harbor bacteria.
  • 08A-05-6:High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Plastic containers of raw beef and raw chicken in marinade were stored on wire shelving in the walk-in cooler directly above large tubs of sauces.
