- 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut lettuce (60F - Cold Holding); green sauce (60F - Cold Holding); sour cream (53F - Cold Holding). Operator placed items on fridge at 1000am. Closes business at 2pm. Must discard all at 2 pm if not sold. Operator adjusted refrigerator temps to colder setting. Will monitor.
- 05-05-4:Intermediate - Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit. Observed foods in refrigerator at over 50 F. Ambient thermometer at 40F. Operator will replace. Ambient thermometer over 20degrees off.
