  • 14-11-5:Basic - Equipment in poor repair. Observed small 1 door reach in cooler preptop at cook-line unable to maintain foods at 41F ambient air at 47F. Operator called repair and moved all 2 TCS products to another cooler. May not use until able to maintain foods at 41F or colder.
  • 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Beef (47F - Cold Holding); bacon (46F - Cold Holding) in small reach in prep top cooler at cookline.
