- 22-20-5:Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed grey slimy film on drop guard inside ice machine.
- 14-11-5:Basic - Equipment in poor repair. Observed small 1 door reach in cooler preptop at cook-line unable to maintain foods at 41F ambient air at 47F. Operator called repair and moved all 2 TCS products to another cooler. May not use until able to maintain foods at 41F or colder.
- 03A-02-5:High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Beef (47F - Cold Holding); bacon (46F - Cold Holding) in small reach in prep top cooler at cookline. Operator states items have been in unit for less than two hours and moved to freezer to quickly cool to 41F within3 hours.
