Observed egg plant parmigiana (97F - Hot Holding); chicken parmigiana (79F - Hot Holding). Operator had eggplant parmigiana and chicken parmigiana in hot display case which was not turned on and he started they were put in to case at 12:00 noon. Operator voluntarily remove item from use and disposed of them. Observed open jar sliced zucchini and garlic and open jar sun dried tomatoes and garlic stored on top of deli display case both labeled refrigerator after opening both at 73F.
