Observed a container of gravy that the manager stated had been hot holding for a few minutes at 116F. Manager had employee reheat item. Tempted at 170F. **Corrected On-Site**

Observed build up on the door handle to the reach in cooler on cook line next to the ice machine. Employee began to clean microwaves and cooler. **Corrective Action Taken**
- 35A-03-4:Basic - Dead roaches on premises. Observed 1 dead roach under wire rack used for storage. Observed 1 dead roach behind reach in cooler on the cook line next to the dish washing area. Manager removed . **Corrected On-Site**
