Per employee stocked patties in cooler at 10:00am. New temperature is 49F at 12:30. Observed reach in cooler ambient temperature at 49F. Meat Patties cooling rate is improper, manager covered meat patties with ice and moved to walk in cooler. New temperature is 50F at 2:25. See stop sale. Warning

Improper cooling rate due to ambient temperature of walk in cooler at 49F because of prolonged opening of cooler door. Manager iced bin of sliced tomatoes for better cooling.
