Observed operator vacuum packaging smoked salmon to sell to customers. Operator does not have HACCP plan or variance. **Warning** - From follow-up inspection 2023-11-21: Operator stated he sent over package sample to lab waiting for testing and results should be delivered sometime after the Thanksgiving holiday. Operator showed rough draft of HAACP plan. **Time Extended** - From follow-up inspection 2024-01-24: Per operator variance for HAACP plan is still in process to be approved. **Time Extended** - From follow-up inspection 2024-03-26: Per operator HAACP plan is still waiting to be approved. Operator stated he contacted the office located in Miami, FL and they informed him the office was backed up and it would take more time to be approved. **Time Extended** - From follow-up inspection 2024-04-30: Owner stated he submitted a revised HAACP plan 4/1/2024. I observed first draft HAACP plan submitted to Tallahassee office.
