Observed an employee wearing gloves handle a soiled wiping cloth then place cooked beef on the flat top grill without changing gloves. The employee was educated on proper gloves protocol. **Corrective Action Taken**
- 16-37-1:Intermediate - No quaternary chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.
- 02C-04-5:Intermediate - Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed cooked beef removed from the freezer not date marked with the date removed from the freezer.
