Establishment has no approved Alternative Operating Procedure. Observed operator stacking sushi in reach in cooler without gloves or utensils. Discussed bare hand contact or AOPs with operator. Operator washed hands and placed gloves on. **Corrective Action Taken**

Observed invoice from Great Wall Seafood VA, LLC does not have parasite destruction information for Escolar. Establishment does not have other parasite destruction from this distributor. Instructed operator to acquire parasite destruction before serving sushi with Escolar. Operator was not willing to call distributor during inspection after being requested multiple times.
