  • 13-03-4:Basic - Employee with no hair restraint while engaging in food preparation. Both employee engaging in food preparation at the time of inspection.
  • 08B-38-4:Basic - Food stored on floor. Case of raw chicken stored on floor under rack storing bags of onions in walk in cooler.
  • 41-07-4:High Priority - Container of medicine improperly stored. Bottle of Mylanta Anti-acid and anti-gas stored on to rack above cut tomatoes, and portioned sauces in walk in cooler.

Hot holding unit stored on to of reach in freezer next to fryers on cook line: nacho cheese (67F - Hot Holding) Employee and inspector observed hot holding unit off. Employee turn holding unit on and inspector discussed nacho cheese temperature must be brought up to 165 degrees. Re-temped at 3:38pm and nacho cheese is (179F - Reheating). In hot holding unit drawer on prep table next to fryers: boneless chicken (110F - Hot Holding) Employee reheated boneless chicken in fryers and boneless chicken is temping at (200F - Reheating).
  • 11-07-5:Intermediate - Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. PIC Daniel not able to answer questions about the big 6 foodborne illness and symptoms. Inspector discussed the Big 6 and symptoms. Provided DBPR Easy way to remember Big 6 form in Spanish. **Corrective Action Taken**
