Observed 4 oz soufflé cups of ranch dressing (6) and blu cheese dressing (7) on line out of temp. They were stacked too high and temped at 62F. Observed General Manager pulling them and disposing them into trash. Educated operator/staff on cleaning and Sanitizing between contact with different raw animal products/ ready to eat products/ produce and fruit. General Manager on what the fill lines are for and not to exceed. He I turned educated employee. Corrected On-Site
