Observed Tuna, Salmon and Karbala on cookie sheet sitting on top of chest freezer next to hand sink, by sushi station not in prep use and still in thawing stage. Educated Operator of the importance of proper thawing methods, and keeping potentially hazardous foods cold,if not cooking right away. Observed Operator put items back into cooler until needed.
