Observed chicken soup (128 F - Hot Holding) at steam table. As per operator for less than two hours. And empanadas (114 F - Hot Holding); ham croquettes (104 F - Hot Holding) at hot box front counter. As per operator for two and a half hours. Operator turned up the temperature of the steam table to reheat. And turned up the temperature of the hot box to reheat the products. **Corrective Action Taken**
  • 41-27-4:High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed Sanitizer Bucket (Chlorine +200 ppm) at front counter. Operator added water to get 100 ppm. Corrected On-Site Repeat Violation
